In collaboration with Danish-Vietnamese artist Dahn Võ, we have designed the new restaurant for Copenhagen burger heroes Gasoline Grill on Købmagergade. Our approach was driven by tactility, respect for what was already there, and a belief in site-specific solutions.

Rather than starting over, we continued the story of the existing space – once home to a local falafel joint. The brown tiles – lining up the room up to 2.5 meters – nod to the aesthetics of classic Danish grill culture, while the centerpiece – a sculptural, hand-treated steel kitchen – thrusts itself into the room, shaped by the narrow footprint and the fast-paced energy of a city grill. The slim format of the restaurant is playfully extended by a wall of mirrors, decorated with art by Dahn Võ that references the classic fairytale of Cinderella.

Reuse played a central role in the design: the back room is furnished with second-hand pieces sourced by Tusindfryd, and the bathrooms feature reclaimed tiles – not just as a sustainable choice, but as an aesthetic one. The textures, patina, and irregularities of the reused objects adds a warm contrast to the clean lines and cool surfaces of the surrounding industrial aesthetic makeup.

The result is a bespoke restaurant that, while carrying Gasoline Grill’s crisp, minimalist identity, also seeks to stand on its own legacy.
